White Bean Cakes

Meatless Monday is upon us again. What to do. What to do.

Pasta? No. Rice? No. Some ancient grain thing? Oh hell no. How about something different. Fried eggs are good. Eggs on top of burgers are one of the best things on earth.

How about a fried egg on top of a veggie burger. Yum. Plate on top of a peppery arugula salad with a acidic lemon vinaigrette, and boom. Magic.

Serves 4: Takes at least 1 1/2 hours, most of that time is resting the patties

Mise en Place

Staples

  • 2 canswhite beans, drained and rinsed
  • black pepper, ground
  • canola oil spray
  • 5 tbsolive oil, divided 1 + 4
  • 1/2 tsptable salt
  • 1/2 tspkosher salt
  • 1/2 handfulsliced almonds
  • 1/2 cuppanko

Produce

  • 2 tspthyme, minced
  • 1/4 cupparsley, minced
  • 2lemons, juiced
  • 3 clovesgarlic, minced
  • 1 largecarrot, grated
  • 2shallots, minced
  • 1 handfulcherry tomato, halved
  • 3 handfulsbaby argulua

Dairy

  • n eggs1 or 2 per person
  • 1 eggbeaten

Equipment

  • 1skillet, medium low
  • 3mixing bowl
  • 1food processor
  • 1sheet pan
  • 1griddle, medium hot

Directions

  1. heat 1 tbs of oil in skilled
  2. sweat carrots and shallots with a bit of salt till soft
  3. add garlic and cook 1 minute
  4. evac to bowl
  5. add beans, 3 tbs of lemon juice, and big pinch of salt to food processor, puree
  6. add bean puree to bowl
  7. add beaten egg, panko, 1/2 tsp of kosher salt, and a few grinds of black pepper to bowl
  8. mix thoroughly
  9. line sheet pan with parchment paper
  10. shape into 8 patties about 3/4 inch thick, and place on sheet pan
  11. cover sheet pan with parchment and pop in fridge 1-8 hours
  12. when ready to eat, make dressing. whisk together 2 tbs lemon juice, 4 tbs olive oil, and table salt to make dressing
  13. in bowl, toss arugula, tomato, and almonds with dressing
  14. plate salad
  15. heat griddle, when hot, spray with cooking spray
  16. cook bean patties, 3-4 minutes a side, evac to plates (2 patties per person)
  17. when patties are done, wipe griddle with paper towel
  18. spray griddle with cooking spray
  19. fry eggs
  20. top bean patties with eggs
  21. crack on pepper if you like
  22. serve and eat
