Leek and Goat Cheese Quiche

I can confirm that real men do indeed eat quiche.
Mise en Place
Pie Crust
- 1 1/4 cupsap flour
- 1/2 tsptable salt
- 1 tbssugar
- 4 tbsbutter cut into pieces
- 3 tbscrisco
- 4 tbsice water
Quiche
- 1 big or two medium leeks, sliced white and light green parts
- 2 tbsbutter
- 1 smallthing of fresh goat cheese
- 2eggs + 2 egg yolks
- 1 1/2 cuphalf and half
- 1/2 tsptable salt
- 1/2 tspwhite pepper
- 1/8 tspmicroplanned nutmeg
Directions
- Pie Crust: Pulse dry stuff together
- Add butter pulse 5 times
- Add shortening pulse 5 times
- Evac to mixing bowl
- Scatter 4 tbs water over mixture
- Press with bench scraper into dough. Add extra water if needed
- Shape into ball
- Cover with plastic wrap
- Refrigerate overnight
- The next day, take dough out, let sit for 30 minutes
- Heat oven to 375
- Using a huge ziploc bag, roll out dough
- Cut away top of bag
- Put buttered pie pan over dough, flip and press dough into pan
- Flute and make it pretty
- Bake with pie weights over foil for 17 minutes
- Quiche: Preheat oven to 375
- Cook leeks slowly over low heat w/ butter and salt till soft
- Meanwhile whisk eggs, half and half, salt, pepper, and nutmeg together
- Scatter leeks on bottom of pie crust
- Crumble and scatter goat cheese on top of leeks
- Open oven, pull out middle rack half way
- Place pie pan on the rack
- Laddle in egg mixture
- Carefully slide rack back into oven
- Cook ~33 minutes
- Let cool 30 minutes
