Crab Stuffed Tomatoes

Name: Crab Stuffed Tomatoes
Ingredients: 6 hazelnuts, crushed; 1/2 tsp whole grain mustard; 2 tbs mayo; 1 tsp olive oil; 1 tsp sherry vinegar; 1 tsp kosher salt; 1/2 tsp white pepper; 1/2 tsp parsley, finely minced; 3 oz crab meat

Small tomatoes, stuffed with crab salad. One maximally delicious bite. These are a great party snack.

Serves 12, scales easily

Mise en Place

Staples

6hazelnuts, crushed
1/2 tspwhole grain mustard
2 tbsmayo
1 tspolive oil
1 tspsherry vinegar
1 tspkosher salt
1/2 tspwhite pepper

Herbs

1/2 tspparsley, finely minced

Seafood

3 ozcrab meat

Equipment

1small skillet

Directions

slice top of tomates off, and scoop out innards with a small spoon
toast hazelnuts in skillet
whisk together mayo, mustard, olive oil, parsley, vinegar, salt, pepper, and hazelnuts
fold in crab
stuff crab into tomatoes
serve and eat
